OUR FRENCH CHEF

Meet Mariah

Her love affair with food is a sweet one. Madie Miles, Mariah’s mom, learned to cook in France. She taught herself from the famous French classics and volumes of Julia Child. And so her daughter grew up with incredible food and beloved Vermont traditions. After waiting tables as a young actress in New York, Mariah enrolled at the Ritz Escoffier. From Paris, she went on to serve as private chef in wonderful places around the world.

In terms of food and food culture, Vermont is really extraordinary. There are more organic farms per capita here than anywhere else in the country. Within a half hour’s drive, you can hit four farmers markets, a handful of cheesemakers and more specialty food shops than you can count on two hands! All year long we have access to incredible produce and humanely raised meats. Sometimes it seems that even our pantry could be a foodie’s guide to the region.

Breakfast at the inn is an old-fashioned meal. Classic dishes made with love and executed with a degree of perfection. A flawless French omelette. An unforgettable crepe. A soft English Muffin piled high with farm eggs, local bacon, and Grafton Cheddar. Low and Slow granola with organic seeds, coconut, and pure Vermont maple syrup. So good you may skip lunch!

Pub Nights

On Thursday nights throughout the summer, we host a weekly Pub Night that's open to the public. Eat outside, enjoy the lawn and the firepit. Play games. Have drinks. The grill’s going, there’s music on the porch. Mingle with locals and enjoy Vermont.
